Key-Concepts

The first eight practice tests focus on key-concepts that are important for the safety of food in a foodservice operation. Each test has 10 questions that are very similar to the real questions that might be on your exam.

Times & Temperatures

The last four practice tests have 10 questions each and focus on the temperature requirements and time allowances for different types of foods. It’s important that you memorize as many of these as you can, because some of them will be on your ServSafe Manager exam.


Updates for 2021 Exams – 7th Edition ServSafe Food Protection Manager

These ServSafe practice tests are based on the “7th Edition ServSafe Manager” textbook and it’s supplemental updates. The questions are relevant for all ServSafe Manager exams issued in 2021.

Be careful when using online ServSafe practice tests. Many websites have recycled old questions from the “6th Edition ServSafe Essentials” textbook.

Furthermore, there have been supplemental updates to the current 7th Edition ServSafe Manager Book due to changes in the FDA Food Code. Many websites have not incorporated those updates into their ServSafe practice tests.

About these ServSafe Manager Practice Tests – Questions & Answers

The real ServSafe Manager exam is comprised of 90 questions, but you’re only graded on 80 of them. The extra 10 questions are “pilot questions” to determine if they will be included in future exams. These ServSafe practice tests only have 20 questions each and you will be graded on all of them.

Just like the real ServSafe Manager exam, these ServSafe practice tests are multiple-choice with four possible answers. You need to score at least 75% in order to pass the real exam. Since these practice tests have 20 questions, you’ll need to answer at least 15 of them correctly to achieve a passing score.

The real ServSafe Manager exam has a two-hour time limit, but these practice tests are not timed. You should try to complete each practice test in less than a half-hour.

After Passing the ServSafe Practice Test & Preparing for the 7th Edition Manager Exam

Once you have passed the ServSafe practice test you’ll need to find a certified proctor to administer the real ServSafe exam. You will not be able to take the test alone. Things to know about the ServSafe Manager exam:

*The ServSafe test must be taken in the presence of a certified proctor, it cannot be taken alone.

*Written exams have to be mailed to the National Restaurant Association in Chicago for scoring. It could take several days before you can get your results. But with the online exam, your results are available immediately after completion.

*The exam is not easy.  It will test your understanding of many aspects of food safety. This is done by presenting you with a situation and asking what the best course of action would be. And testing your memory of all of the different cooking times and temperatures.

*You must achieve a minimum score of 75% to pass the exam.

*The test is multiple choice with four possible answers. There are 90 questions on the exam. You’re only graded on 80 of those questions. The remaining 10 are “pilot questions” to determine if they will be included as graded questions in future exams.

*You have two hours to complete the exam. If you fail you can retest after 24 hours. However, after failing twice you are required to wait at least 90 days before retesting.

*If you’re not sure of an answer you can mark the question for review. This allows you to skip to the next question and come back to the marked questions later.
